White Chocolate Oatmeal Cookies Recipe
These white chocolate oatmeal cookies will please all white chocolate lovers and the addition of oats make them a hearty and nutritious sweet treat.
You can make these as a Festive Christmas treat that the whole family will adore, or any time of the year when you’re craving the unique flavor of a white chocolate chip delight. (For more white chocolate inspiration, here’s my easy homemade white hot chocolate.)
How To Make The Easy Homemade Cookies

Start by gathering the simple ingredients for the easy recipe:
- 100g/3.5oz Unsalted Butter
- 1/3 Cup White Sugar
- 1/3 Cup Brown Sugar
- 1 teaspoon Vanilla Extract
- 1 Egg
- 1 Cup Flour
- 1/2 teaspoon Baking Soda/Bicarb
- 1/2 teaspoon Baking Powder
- 1/3 Cup Oats
- 1 Cup White Chocolate Chips
Get the oven preheating to 180C/350F and line a baking tray with well greased baking paper, so that it’s ready to go when you’re ready to fill your tray with cookie dough.

Melt the butter either in a pot on the stovetop over medium heat or in the microwave in 30 second bursts until melted, then pour the melted butter out into a large bowl.
Add the white sugar, brown sugar and vanilla to the melted butter and stir through until fully combined, then crack the egg over the bowl and mix that through.

Add in the flour, baking soda or bicarb and baking powder and mix until just starting to form a cookie dough. At that point, mix through the oats and chocolate chips.

Combine until you have the perfect white chocolate chip speckled cookie dough mixture.

Drop the cookie dough onto the prepared baking tray, about a heaped tablespoon per cookie will result in large cookies. Make sure to leave a little room for the cookies to expand on baking.
I got 9 large cookies out of my batter, but if you make smaller cookies you could make 12, or more.
Depending on the size of your tray and how big you’d like your cookies to be, you may need a second tray or you can bake your cookies in batches.

Place the cookies into the oven for 10-15 minutes or until perfectly golden brown and cooked to your liking.
The shorter the baking time, the chewier the cookies and the longer the cooking time the crisper the cookies, so it really depends on the cookie consistency you’re after.
Once you’ve removed the cookies from the oven, allow them to cool to room temperature before removing from the tray and enjoying, storing leftover cookies in an airtight container to enjoy within a couple of days. (If they last that long!)

- Add in the oats and white chocolate chips, then mix through until you have a cookie dough.
- Drop a heaped tablespoon of the cookie dough per cookie onto the prepared baking tray, leave them a little bit of room to spread out, you may need a second tray or bake the cookies in batches if you’d prefer.
- Place the cookie tray into the preheated oven for 10 to 15 minutes or until golden brown and done to your liking.
- Allow to cool completely to room temperature to firm up, then store in an airtight container and enjoy.
