Easy Apple Muffins Recipe
These easy apple muffins recipe have all of the flavours of a comforting apple pie, but without the effort. (For another apple dessert recipe, try my easy 2 ingredient apple chocolate mousse.)
How To Make The Homemade Muffins
Start by gathering the simple ingredients for the easy recipe:
- 125g/4.4oz Unsalted Butter, Softened
- 1/2 Cup Brown Sugar
- 2 Eggs
- 1 teaspoon Vanilla Extract
- 1/2 Cup Milk
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 2 Cups Plain Flour
- 2-4 Fresh Apples, peeled, cored and chopped
Get the oven preheating to 180C/350F and line a 12 hole muffin tin with cupcake liners, so that it’s ready to go when you’re ready to fill your tray with the muffin batter.
Using an electric mixer, whisk together the softened butter and sugar in a large bowl until smooth and creamy. You can use brown sugar as I have done, which works really well in this recipe, or you could swap for white sugar or any other sugar you’d like.
Add in the eggs, vanilla and mix then whisk again until fully incorporated, before adding in the dry ingredients of the cinnamon, baking soda and baking powder. Baking soda is called bread soda here in Ireland and it may also be called bicarbonate of soda, depending where you are in the world.
Swap to a spoon or spatula and stir through the flour and then apples until you have chunky apple speckled muffin batter.
Distribute the muffin batter between the prepared baking tin them move to the oven and cook for 25 to 25 minutes baking time or until golden brown and done to your liking.
Allow the apple pie muffins to cool to room temperature before removing from the tin and enjoying within a couple of days – if they last that long.

- Place the softened butter and brown sugar into a large bowl and whisk with an electric mixer until smooth and creamy.
- Add the eggs, vanilla and milk to the butter and sugar mixture then whisk until smooth.
- Add in the ground cinnamon, baking soda and baking powder and give the batter a final whisk until fully incorporated.
- Add in the flour and mix through with a spoon or spatula until a muffin batter is formed.
- Mix the chopped apples through the muffin batter.
- Divide batter between the cupcake liners in the prepared tin.
- Move the muffins to the preheated oven for 25 to 35 minutes cooking time or until golden brown and cooked through. Allow to cool to room temperature, before removing from the tin, then store cooled muffins in an airtight container to enjoy within a few days.
